Madagascar is the world's biggest vanilla producer with approximately 3,114 tons of vanilla produced in the year 2023 as per the World Population Review. It is more than double the second placed country's production. Nowadays Madagascar is the world's leading producer of vanilla, accounting for over 70% of the world's vanilla beans, which are mainly grown in the northeastern SAVA region of Madagascar.

Where Exactly in Madagascar Does Vanilla Come From?

Production of vanilla is majorly concentrated in the SAVA area in the northeast of Madagascar. Today, SAVA accounts for around 80% of the vanilla production in Madagascar. The SAVA name consists of the initials of four major production towns which are Sambava, Antalaha, Vohemar and Andapa

The Samba Vanilla website mentions: “Vanilla from Madagascar has had the Bourbon appellation since 1964. Vanilla cultivation in Madagascar is mainly concentrated in a region known as the "orchid triangle" where all the right climatic conditions are present for optimal planting. It is also called "SAVA", which corresponds to the initials of the main production towns, namely Sambava, Antalaha, Vohemar and Andapa.”

Why is Vanilla So Expensive?

Vanilla is the second most expensive spice in the world (by weight) after saffron, as it takes a lot of labor to grow the vanilla seed pods. 

All vanilla flowers need to be hand-pollinated, a very labor-intensive process. Pollination does not complete the curing process of the vanilla beans to make them usable pods. After curing, the pods contain only 2% usable flavouring and high production is needed to satisfy the demand for vanilla flavouring

The World Population Review mentions: “Despite the high production numbers from countries such as Madagascar and Indonesia, vanilla is a difficult crop to grow. However, it also has a high demand as a flavoring ingredient, which leads to high prices for products that use natural vanilla.”

“To produce vanilla, the flowers require specific growing conditions and laborious production. Most of the countries that produce vanilla have warm climates. Additionally, vanilla grown today requires hand pollination to ensure production. This labor-intensive task adds to the cost and effort of growing vanilla. Today, the vanilla flavor from natural vanilla beans only accounts for 1% of global use. Additionally, 80% of all vanilla grown comes from small farms in Madagascar. Even after pollinating, the vanilla beans require curing to produce usable pods. Following curing, pods only have 2% useable flavoring, requiring high production levels to meet the demand for vanilla flavoring. The high demand for vanilla flavoring coupled with the intensive growing requirements of the plant drives the prices of vanilla up to $300 per pound,” it adds. 

Madagascar produces the most vanilla. Approximately 80% of the total vanilla production is from small farms in Madagascar. Vanilla is a flavour with a long history, dating back centuries and originally from Mexico, but this tiny island country off the coast of Africa is now the world's primary source of vanilla.
